Mediterranean kale pasta salad with cherry tomatoes, olives, cucumber, bell peppers, and tangy Greek dressing.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 2 cups shredded kale
  • 2 medium carrots, shredded
  • 1.5 cups cherry tomatoes, halved
  • 1 cup sliced black olives, drained
  • 1 cucumber, chopped
  • 1 medium red bell pepper, chopped
  • 0.5 shallot, chopped
  • 1 cup Greek salad dressing
  • 2 tablespoons mayonnaise
Instructions:
  • 1. Boil generously salted water in a large pot. Cook penne until al dente, stirring occasionally, for about 11 minutes. Drain pasta thoroughly before using.
  • In a large bowl, toss together pasta, kale, carrots, cherry tomatoes, olives, cucumber, bell pepper, and shallot. In a separate bowl, whisk together Greek dressing and mayo, then pour over the salad. Mix well until everything is evenly coated.
