Kale with Mozzarella and Hot Pepper Jelly Panini

Spicy pepper jelly, gooey melted cheese, and crisp kale in a delicious panini.
Ingredients:
  • 1 teaspoon olive oil
  • 1 shallot, thinly sliced
  • 1 bunch (8 oz) fresh kale, ribs removed, torn into bite-size pieces (6 cups)
  • 1/8 teaspoon salt
  • 2 tablespoons water
  • 8 slices whole wheat artisan bread, 1/2 inch thick
  • 4 tablespoons hot pepper jelly
  • 4 oz fresh mozzarella cheese, sliced, torn into small pieces
  • Cooking spray
Instructions:
  • Heat oil in a 12-inch nonstick skillet over medium heat. Sauté shallot for about 3 minutes until softened. Stir in kale and salt, cook for another 3 minutes until wilted. Pour in water and cook for an additional 2 minutes, adding more water if necessary. Set aside.
  • Preheat the panini grill to medium-high. Place the bread slices on a work surface. Evenly spread 1 1/2 teaspoons of jelly on one side of each slice. Divide the kale mixture among 4 slices of bread, then add one-fourth of the mozzarella cheese pieces on each. Top with the remaining bread slices, jelly side down. Lightly spray both sides of the sandwiches with cooking spray.
  • Grill the sandwiches until the cheese is melted, grill marks appear, and serve immediately.
