Vibrant kale salad with kiwi, ginger, garlic, and zesty black pepper for a fresh and flavorful side.
Ingredients:
  • 2 teaspoons coconut oil
  • 2 cloves garlic, chopped
  • 1 teaspoon minced fresh ginger
  • 0.25 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 kiwis, peeled and coarsely chopped
  • 1 tablespoon fresh oregano leaves
  • 1 bunch lacinato (dinosaur) kale, washed and sliced thin
  • 2 tablespoons blanched slivered almonds
Instructions:
  • Start by heating coconut oil in a skillet over medium-high heat. Then, add garlic, ginger, sea salt, and freshly ground black pepper. Cook and stir until the garlic starts to turn color, which should take about 3 minutes. Next, stir in chopped kiwi and oregano leaves and cook for an additional 2 minutes. After that, introduce the kale, lower the heat to medium, and keep cooking until the kale turns dark green and becomes tender, approximately 5 minutes. Finally, add slivered almonds, and adjust the seasonings to your taste.
