Elevate nasi goreng with additional veggies like mushrooms and green beans. Serve with fresh cucumber and cherry tomatoes as a refreshing side.
Ingredients:
  • 36.40 gm peanut oil
  • 3 French shallots, thinly sliced
  • 6.10 gm shrimp paste
  • 1 chicken breast, finely chopped
  • 2 x 250g pkt microwave jasmine rice
  • 150g small peeled prawns
  • 70g (1/2 cup) frozen peas
  • 40.00 ml Sweet Soy Sauce, plus extra, to drizzle
  • 22.00 gm sweet chilli sauce
  • 3 tsp sambal oelek, to taste
  • 4 eggs
  • 2 green shallots, sliced
Instructions:
  • In a large frying pan or wok over medium-high heat, heat half of the oil and swirl to coat the base. Add the garlic and shallot, stir-fry for 1 minute, then add the shrimp paste and cook for 30 seconds.
  • Add the chicken and cook for 3-4 minutes until it turns golden and is fully cooked. Then add the rice and prawns, stirring for 1 minute before mixing in the peas.
  • Pour in the sweet chilli sauce, sweet soy sauce, and sambal oelek. Stir well to blend flavors. Take off the heat and cover to maintain warmth. In another pan, heat the remaining oil over medium heat and fry the eggs for 2-3 minutes to your desired doneness.
  • Portion the rice into bowls. Place a delightful egg on top, sprinkle with shallots, and generously drizzle with extra sweet soy sauce.
