Delicious corn spoon bread, perfect side for prime rib dinner.
Ingredients:
  • 2.75 cups 1% milk
  • 0.25 cup whipping cream
  • 1.25 cups finely ground white cornmeal
  • 3 large eggs, well beaten
  • 3 tablespoons unsalted butter, divided
  • 3 tablespoons white sugar
  • 1.75 teaspoons baking powder
  • 1 cup corn
Instructions:
  • In a heavy saucepan over high heat, bring milk and cream to a boil, whisk occasionally. While whisking, add cornmeal in a steady stream. Whisk vigorously for about 1 minute to fully incorporate. Remove from heat and let cool to room temperature.
  • Move the cornmeal mixture to a stand mixer bowl with a paddle attachment. Add eggs, 2 tablespoons of butter, sugar, baking powder, and salt. Beat on medium speed for 15 minutes until smooth and airy. Gently fold in the corn by hand.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Use the remaining 1 tablespoon of butter to gently grease a 1 1/2-quart round casserole dish before pouring in the batter.
  • Bake in the preheated oven for around 30 minutes, or until the top is golden brown, puffy, and a toothpick inserted in the center comes out clean.
