Delicious lemon bars made with almond flour and Swerve® sweetener for a low-carb, keto-friendly treat.
Ingredients:
  • 2.5 cups low-calorie natural sweetener (such as Swerve®)
  • 8 tablespoons butter, melted
  • 0.5 teaspoon almond extract
  • 1.5 cups low-calorie natural sweetener (such as Swerve ®)
  • 0.75 cup almond flour
  • 3 lemons, juiced
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect cooking temperature.
  • Combine 2 1/2 cups sweetener, melted butter, and almond extract in a bowl, then press the mixture into an ungreased 9x13-inch pan.
  • Bake the crust in the preheated oven for 15 to 20 minutes until golden brown. Remove from oven but keep it on. Allow the crust to cool for 10 minutes.
  • Combine 1 1/2 cups of sweetener and almond flour in a bowl. Gently whisk in eggs and lemon juice, then pour the mixture over the cooled crust.
  • Bake in a hot oven for 20 minutes and then cut into 18 bars.
