Tangy lemon garlic chicken thighs, perfect for keto diets. Pair with mashed cauliflower or preferred keto side.
Ingredients:
  • 0.25 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 4 skin-on, bone-in chicken thighs
  • 4 lemon wedges
Instructions:
  • Combine the zesty lemon juice, rich olive oil, tangy Dijon mustard, savory garlic, and a pinch of salt and pepper in a bowl to create a flavorful marinade. Set it aside for later use.
  • In a large resealable plastic bag, coat the chicken thighs with marinade ensuring full coverage. Seal the bag and refrigerate for a minimum of 2 hours.
  • Preheat your air fryer to 360°F (175°C).
  • Dry the marinated chicken with paper towels and transfer to the air fryer basket, cooking in batches if needed.
  • Cook the chicken until no longer pink at the bone and the juices run clear, which should take about 22 to 24 minutes. Use an instant-read thermometer to check for doneness - it should read 165 degrees F (74 degrees C). Serve by squeezing a lemon wedge over each piece.
