Prepare vegan lemon coconut fat bombs for a convenient energy boost, perfect for keto and raw diets.
Ingredients:
  • 1 cup dry unsweetened shredded coconut
  • 0.25 cup coconut oil, at room temperature
  • 3 tablespoons powdered erythritol sweetener (such as Swerve®)
  • 2 tablespoons lemon zest
  • 1 pinch sea salt
Instructions:
  • In a food processor, blend shredded coconut until creamy for about 15 minutes. Add coconut oil, erythritol, lemon zest, and sea salt, blending until thoroughly combined. Spoon mixture into mini muffin cups and refrigerate until firm, approximately 30 minutes.
