Ingredients:
  • 0.5 cup almond flour
  • 0.5 cup almond butter
  • 0.5 teaspoon vanilla extract
  • 0.5 cup vegan chocolate chips
  • 2 tablespoons chopped almonds
Instructions:
  • Prepare a baking sheet by lining it with parchment paper.
  • In a bowl, blend together almond flour, almond butter, and vanilla extract until a smooth dough forms. Shape into 1/2-inch balls and arrange on a baking sheet. Chill in the freezer until firm, approximately 20 minutes.
  • Melt chocolate chips in the microwave, stirring every 15 seconds for 1 to 3 minutes. Dip cookie balls in melted chocolate, sprinkle with chopped almonds, and let sit for about 10 minutes until chocolate sets.
