Tangy Key lime pie bars - a zesty and refreshing dessert for any occasion!
Ingredients:
  • 1 1/2 cups coconut cookie crumbs, (17 cookies)
  • 3 tablespoons butter or margarine, melted
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 1/4 cup Key lime juice or Regular lime juice
  • 1 tablespoon grated lime peel
  • Lime peel or strawberries, if desired
Instructions:
  • Preheat oven to 350°F and generously grease a 9x9x2-inch square pan.
  • Combine cookie crumbs and butter until fully incorporated. Press the mixture evenly into the bottom of the pan and chill in the refrigerator while you make the cream cheese mixture.
  • In a small bowl, use an electric mixer to beat cream cheese until light and fluffy. Gradually mix in milk until smooth. Add lime juice and lime peel, then spread over the layer in the pan.
  • Bake for approximately 35 minutes or until the center is firm. Allow to cool for 30 minutes. Cover loosely, then refrigerate for at least 3 hours until chilled. Cut into 36 bars by slicing into 6 rows by 6 rows. Garnish with lime peel and store covered in the refrigerator.
