Indulge in zesty white chocolate cheesecake bars for a delightful citrus dessert.
Ingredients:
  • 1/2 cup butter, softened
  • 1/4 cup packed brown sugar
  • 2 teaspoons vanilla
  • 1 cup Gold Medal™ all-purpose flour
  • 1 package (8 oz) cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 whole egg
  • 3 teaspoons grated lime peel
  • 3 oz white chocolate baking bars or squares, melted
  • 4 egg yolks
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 3/4 cup water
  • 1/4 cup Key lime juice
  • 2 tablespoons butter
  • Lime slices, if desired
Instructions:
  • Preheat oven to 325°F and lightly grease an 8-inch square pan with shortening or cooking spray.
  • In a medium bowl, cream together 1/2 cup of butter and brown sugar until creamy using an electric mixer. Mix in 1 teaspoon of vanilla until well combined. Gradually add and mix in the flour until fully incorporated. Press the dough into the pan and bake for 25 minutes or until golden brown. Allow it to cool on a rack before serving.
  • In a large bowl, use an electric mixer to blend cream cheese and powdered sugar until creamy. Then, mix in the whole egg, 1 teaspoon lime peel, 1 teaspoon vanilla, and melted white chocolate until well combined. Refrigerate the mixture once done.
  • In a 2-quart saucepan, combine egg yolks, granulated sugar, and cornstarch. Gradually whisk in water and lime juice. Cook over medium-low heat, stirring constantly, until thickened and coats the back of a spoon. Remove from heat and whisk in 2 tablespoons of butter and the remaining 2 teaspoons of lime peel. Let cool for 10 minutes before serving.
  • Smooth the luscious cream cheese filling over the baked crust, followed by pouring the vibrant lime curd over the top.
  • Bake until edges are lightly browned, then cool completely on a rack. Chill for 2 hours, cut into 4x4 rows, garnish with lime slices, and store in the refrigerator.
