Key lime pie cookies with white chocolate chips.
Ingredients:
  • 0.5 (8 ounce) package cream cheese, at room temperature
  • 0.5 cup butter, at room temperature
  • 0.5 cup light brown sugar
  • 0.25 cup white sugar
  • 1 large egg
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1 cup white chocolate chips
  • 2 tablespoons Key lime zest
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 2 cookie sheets with cooking spray or silicone baking liners.
  • In a mixing bowl, blend cream cheese, butter, brown sugar, and white sugar until light and fluffy using an electric mixer. Add egg and vanilla extract, mix until smooth. Gradually incorporate flour, baking powder, and salt. Gently fold in white chocolate chips and lime zest.
  • Spoon dollops of cookie dough onto the lined cookie sheets, ensuring there is 1 inch of space between each cookie.
  • Bake in the preheated oven for 10 to 14 minutes, or until cookies are set and have a light golden brown edge.
