Key Lime Pie Graham Cracker Sandwich Cookies: Tangy cream cheese filling sandwiched between graham crackers for a delightful treat!
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.75 cup graham cracker crumbs
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, softened
  • 0.75 cup white sugar, divided, or as needed
  • 1 large egg yolk
  • 0.5 teaspoon vanilla extract
  • 3 medium Key limes
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup confectioners' sugar
Instructions:
  • Preheat the oven to 375°F (190°C) and line 2 baking sheets with parchment paper.
  • Mix together flour, graham cracker crumbs, baking soda, baking powder, and cinnamon in a bowl.
  • In a bowl, use an electric mixer to blend together butter and 1/2 cup of sugar until creamy. Add egg yolk and vanilla, blend until combined. Incorporate dry ingredients and mix until dough forms, for about 1 to 2 minutes.
  • Shape dough into 1-inch balls and coat with sugar. Arrange on baking sheets.
  • Bake in the preheated oven until bottoms are lightly browned, 6 to 7 minutes, then cool on the baking sheets for 5 minutes before transferring to a wire rack to cool for an additional 8 to 10 minutes.
  • Zest all 3 limes and set the zest aside, then juice 2 of the limes.
  • In a mixing bowl, use an electric mixer to whip the cream cheese until velvety. Blend in the confectioners' sugar. Then, incorporate the lime juice and zest until fully blended.
  • Spread the delicious filling on the flat sides of half of the cookies, then sandwich them together with the remaining cookies.
