Iconic Key Lime Pie - a taste of sweet American tradition.
Ingredients:
  • 250g packet Granita biscuits
  • 125g butter, melted
  • 4 egg yolks
  • 395g can sweetened condensed milk
  • 20.00 ml finely grated lime rind (see note)
  • 131.25 gm lime juice
  • 2 egg whites
  • Lime, thinly sliced, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and grease a 3cm-deep, 24cm round fluted flan tin with a loose base. In a food processor, blend the biscuits until fine, then add melted butter and pulse until combined. Press the mixture onto the base and sides of the tin. Set the tin on a baking tray and bake for 8 to 10 minutes until golden brown. Let it cool before using.
  • Preheat oven to 160°C/140°C fan-forced. Beat egg yolks with an electric mixer until pale and thick. Gradually mix in condensed milk, lime rind, and lime juice. In a separate clean bowl, beat egg whites with an electric mixer until soft peaks form.
  • Delicately combine egg whites into yolk mixture in two parts. Transfer mixture into pie crust. Bake for 15 to 18 minutes until the filling is just set (it will have a slight wobble in the center). Allow to cool, then refrigerate for 2 hours. Garnish pie with sliced lime and enjoy with whipped cream.
