Preheat the oven to 350°F. Combine cookie crumbs, 1 tablespoon of Truvia™ Natural Sweetener, and melted butter in a medium bowl. Press the mixture into the bottom and 1 inch up the side of an ungreased 9-inch pie plate. Bake for 10 minutes.
In a medium bowl, whisk together the cornstarch, milk, salt, and egg yolks until smooth. Stir in 2 tablespoons Truvia™ Natural Sweetener, lime juice, and lemon extract until well combined. Pour the mixture into the crust, even if the crust is still warm.
Bake for 25 to 27 minutes until the edges of the filling start to set. The filling may appear runny, but it will thicken and set as it cools.
Allow to cool completely on a cooling rack for at least 25 minutes. Refrigerate while covered for 8 hours before serving. Garnish with whipped topping before serving.
