Key lime pie

Classic key lime pie is mouthwateringly exquisite.
Ingredients:
  • 200g wheatmeal or Granita biscuits
  • 25.00 gm ground almonds
  • 20.00 gm caster sugar
  • 100g butter, melted
  • 4 eggs, lightly beaten
  • 395g can condensed milk
  • 160ml cream
  • Zest and juice of 4 limes
Instructions:
  • Preheat your oven to 170°C and line the base of a 20cm springform tin with baking paper.
  • Pulse biscuits until finely ground. Add almonds, sugar, and butter, then pulse until mixture comes together. Press firmly into base and up sides of tin to form a 3cm high crust. Chill in the refrigerator.
  • Combine eggs, milk, cream, lime rind, and juice until silky. Gently transfer mixture into biscuit crust.
  • Arrange on a baking tray and bake for 40-45 minutes, or until firm. Allow to cool, then serve with additional lime slices.
