Zesty key lime and creamy white chocolate unite in a beloved dessert: key lime white chocolate cheesecake.
Ingredients:
  • 2 tablespoons graham cracker crumbs
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 (12 ounce) package white chocolate chips
  • 0.5 cup heavy whipping cream
  • 4 key limes, zested and juiced
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and lightly grease the bottom of a 9-inch springform pan.
  • Evenly scatter graham cracker crumbs on the bottom of the pan.
  • Using an electric mixer, blend cream cheese and sugar together in a large bowl until smooth. Gradually add eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  • Combine white chocolate chips, cream, zesty lime juice, and fragrant lime zest in a sleek stainless steel bowl, then gently set the bowl over a simmering pot of water.
  • Melt chocolate chips until smooth, then combine with cream cheese mixture. Pour over graham cracker crumbs in springform pan.
  • Bake the cake until the center is set, around 75 minutes in a preheated oven. Allow it to cool at room temperature for 15 minutes, then refrigerate until completely chilled, at least 1 hour.
