Irresistible Key Lime Cupcakes bursting with refreshing citrus flavor, topped with a delightful glaze and frosting. A must-try for all bakers, guaranteed to disappear quickly from the dessert table. Enjoy the zesty goodness!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • 1 box (4-serving size) Jell-O™ lime-flavored gelatin
  • 2/3 cup water
  • 1/3 cup Key lime juice
  • 1/3 cup vegetable oil
  • 3 eggs
  • 2 or 3 drops Betty Crocker™ Green Gel Food Color, if desired
  • 1 cup powdered sugar
  • 2 to 2 1/2 tablespoons Key lime juice
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 3 1/2 cups powdered sugar
  • Grated lime peel, if desired
Instructions:
  • Preheat the oven to 375°F (or 350°F for dark or nonstick pans). Place a paper baking cup in each of 22 regular-size muffin cups. In a large bowl, use an electric mixer on medium speed to beat the cupcake ingredients for 2 minutes, making sure to scrape the bowl occasionally. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Bake for 13 to 18 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a cooling rack. Pierce the tops of the cupcakes in several places using a toothpick or wooden skewer.
  • Combine 1 cup powdered sugar with 2 to 2 1/2 tablespoons lime juice until the glaze is smooth and spreadable. Drizzle the glaze over the warm cupcakes and allow to cool for about 30 minutes.
  • In a large bowl, whip cream cheese and butter until light and fluffy. Add vanilla and 3 1/2 cups of powdered sugar on low speed until combined; beat on medium speed until fluffy. Frost cupcakes to your liking and top with lime peel. Refrigerate covered.
