Festive Cinco de Mayo cupcakes: Key lime flavor with cream cheese frosting and lime zest.
Ingredients:
  • 1 (15.25 ounce) package white cake mix (such as Pillsbury® Classic White)
  • 1 cup water
  • 3 eggs
  • 0.33333334326744 cup vegetable oil
  • 2 tablespoons lime zest
  • 1 tablespoon fresh lime juice
  • 3 drops green food coloring
  • 0.5 cup butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 1.5 cups confectioners' sugar, sifted
  • 2 tablespoons pearlized sprinkles, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then prepare 24 muffin cups by lining them with paper liners or giving them a quick spray with cooking spray.
  • Combine cake mix, water, eggs, and vegetable oil in a bowl and use an electric mixer to blend until smooth for about 2 minutes. Incorporate 2 tablespoons lime zest, lime juice, and food coloring, then pour the batter into the muffin cups.
  • Bake until cupcakes are golden and a toothpick comes out clean when inserted in the center, approximately 18 minutes. Allow cupcakes to cool on a wire rack.
  • In a bowl, use an electric mixer to blend the butter and cream cheese until creamy. Add lime zest and vanilla to the mixture and combine. Gradually mix in confectioners' sugar until smooth. Chill in the refrigerator for 30 minutes until the frosting thickens.
  • Frost cupcakes generously and sprinkle with colorful sprinkles for a delightful finish.
