Key lime pudding with creamy soymilk and fresh strawberry layers for a delectable homemade dessert.
Ingredients:
  • 1 1/2 cups vanilla soymilk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 cup bottled Key lime juice or lime juice
  • 1/2 teaspoon finely grated lime peel
  • 2 cups Cool Whip fat-free frozen whipped topping, thawed
  • 2 tablespoons graham cracker crumbs
  • 1 teaspoon sugar
  • 1 teaspoon butter or trans-fat-free margarine, melted
  • 1 1/2 cups sliced fresh strawberries or Cascadian Farm™ frozen organic strawberries, thawed and drained
  • Additional whipped topping, if desired
Instructions:
  • In a 1-quart stainless steel or nonstick saucepan (avoid using aluminum to prevent discoloration), whisk together soymilk, 1/2 cup sugar, cornstarch, Key lime juice, and lime peel until cornstarch is dissolved. Bring to a boil while stirring constantly. Allow to boil for 1 minute, continuing to stir constantly.
  • Place a piece of plastic wrap directly on top of the pudding mixture to prevent a skin from forming. Refrigerate for 30 minutes, giving it a stir now and then, until it's cooled.
  • In a small bowl, combine the crumb mixture and set it aside.
  • Carefully combine 2 cups of whipped topping with the pudding mixture. Divide the mixture evenly into 6 small parfait glasses or dessert bowls by spooning 1/4 cup into each. Sprinkle each portion with 1/2 teaspoon of crumb mixture and top with 2 tablespoons of strawberries. Repeat the layers. Finish each serving with a dollop of extra whipped topping on top. Enjoy right away.
