King of puddings

Decadent pudding with layers of gooey goodness, fresh fruit, and satisfying crunch.
Ingredients:
  • 4 free-range eggs
  • 565 ml milk
  • 115 g fine breadcrumbs
  • 225 g sugar preferably vanilla sugar
  • 4 level tablespoons jam raspberry is really nice
Instructions:
  • Preheat oven to 150ºC/300ºF/gas 2. Separate 3 eggs, putting yolks in a bowl with 1 whole egg, beat together with milk, breadcrumbs, and 85g sugar. Spread jam evenly in a pie dish, then pour custard mixture over it. Bake for 1 hour until set. Whisk 3 egg whites until stiff, gradually add remaining sugar, then pile on top of custard. Bake for 15-20 minutes until meringue is set and lightly browned.
