Cheddar chicken nachos with creamy tomato-onion sauce on crispy tortilla chips.
Ingredients:
  • 1 (3 pound) chicken, boiled and deboned
  • 1 (14.5 ounce) package tortilla chips
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 onion, chopped
  • 3 cups shredded Cheddar cheese
Instructions:
  • Preheat oven to 300°F (150°C).
  • Arrange the chips evenly in a 9x13 inch casserole dish.
  • Mix together the tomatoes, chicken soup, mushroom soup, and onion. Spread half of the mixture over the chips. Top with chicken pieces, half of the cheese, and the rest of the soup mixture.
  • Bake for 20 minutes at 300 degrees F (150 degrees C. Sprinkle with the rest of the cheese and bake until melted.
