Turkish-inspired kofta: Ground lamb meatballs with parsley, cumin, and mint, pan-fried until golden.
Ingredients:
  • 2 slices slightly stale whole wheat bread
  • 1 pound lean ground lamb
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried mint
  • 0.5 teaspoon ground allspice
Instructions:
  • In a food processor, combine torn bread slices to make fine crumbs. Add ground lamb and egg; blend until smooth. Mix in parsley, garlic, cumin, mint, allspice, salt, and pepper until well combined.
  • Shape the lamb mixture into bite-sized meatballs.
  • In a large skillet, heat olive oil over medium heat. Brown meatballs in batches, turning occasionally, until golden on all sides (about 4 to 5 minutes per batch). Use a slotted spoon to transfer them to a paper towel-lined plate.
