Craft a delicious Middle Eastern feast with flavorful lamb kofta and fresh fattoush salad.
Ingredients:
  • 500g lean lamb mince
  • 1/2 small brown onion, grated
  • 1 garlic clove, crushed
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • Olive oil cooking spray
  • 2 pita breads, split in half
  • 250.00 ml fresh flat-leaf parsley leaves, chopped
  • 250.00 ml fresh mint leaves, chopped
  • 1 Lebanese cucumber, chopped
  • 1 green capsicum, chopped
  • 2 tomatoes, chopped
  • 3 green onions, sliced
  • 9.20 gm extra virgin olive oil
  • 1/2 lemon, juiced
  • 1/2 tsp sumac spice
Instructions:
  • Combine mince, onion, garlic, cumin, and coriander in a bowl, then mix thoroughly by hand. Divide the mixture into 8 equal portions and shape each into a 12cm-long sausage.
  • Preheat a non-stick frying pan over medium heat. Lightly coat the lamb kofta with oil. Cook for 8 minutes, turning occasionally, until browned and fully cooked.
  • Preheat the grill on high heat until sizzling. Grill the bread on both sides until golden and crunchy. Let it cool, then gently break it into big pieces.
  • In a large bowl, toss together parsley, mint, cucumber, capsicum, tomato, and green onion. Drizzle with oil and 1 tablespoon of lemon juice. Sprinkle with sumac, season with salt and pepper, then add bread. Gently toss to combine and serve with lamb kofta.
