Lamb kofta with Lebanese bread and hommus

Delicious Lebanese kofta wrapped in bread with fresh salad and creamy hummus.
Ingredients:
  • 4 lamb leg chops
  • 62.50 ml pine nuts
  • 1/2 small brown onion, chopped
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 20.00 ml chopped fresh coriander leaves
  • 18.20 gm olive oil
  • Lebanese bread, to serve
  • Hommus, to serve
  • Salad leaves, to serve
Instructions:
  • Trim fat and bone from chops, then roughly chop the meat. Combine lamb, pine nuts, onion, cumin, ground coriander, garlic, and coriander leaves in a food processor until almost smooth. Shape heaped tablespoons of the mixture into twenty 6cm-long logs.
  • In a frying pan over medium heat, brown and cook lamb in batches for about 5 minutes until perfectly cooked.
  • Present the lamb kofta alongside bread, hummus, and mixed salad leaves for a delightful meal.
