Try delicious Lamb kofta with fluffy couscous for a quick weeknight dinner.
Ingredients:
  • 1 small brown onion, chopped
  • 1 garlic clove, halved
  • 165.00 ml natural sliced almonds, toasted
  • 165.00 ml mint leaves
  • 5.00 gm ground cumin
  • 2.50 gm ground cinnamon
  • 1/4 tsp ground chilli
  • 500g lamb mince
  • Salt and pepper, to season
  • 375.00 ml CousCous
  • 382.50 gm vegetable liquid stock
  • 85.00 gm sultanas
  • 100g feta cheese, crumbled
  • 187.50 ml natural yoghurt or Greek yoghurt
Instructions:
  • Finely chop the onion and garlic in a food processor. Add half of the almonds and pulse until a coarse paste forms. Throw in half of the mint and the spices, and blend for 10 seconds until the mint is finely chopped. Transfer the mixture to a large bowl, then add the mince and season generously with salt and pepper. Mix everything together thoroughly using your hands.
  • Shape each portion of the lamb mixture around a medium metal skewer to make 8 kebabs.
  • In a large frying pan or chargrill pan, heat oil over medium-high heat. Cook the skewers for 8-10 minutes until golden brown and fully cooked.
  • While the couscous is resting, place it in a large heatproof bowl. Pour in 1½ cups of boiling stock and add sultanas. Use a fork to stir until the liquid is absorbed. Cover and let it stand for 3 minutes. Fluff up the couscous with a fork to separate the grains, then cover and let stand for an additional 2 minutes. Fluff up once more and mix in the remaining almonds and mint leaves. Serve with kofta, feta, and yogurt on top.
