Korean beef lettuce cups

Popular Korean BBQ marinated beef, known as bulgogi.
Ingredients:
  • 600g piece beef sirloin steak, fat trimmed
  • 1 onion, grated
  • 5 garlic cloves, finely chopped
  • 125ml soy sauce
  • 1 tsp sesame oil
  • 2 tsp grated ginger
  • 32.00 gm brown sugar
  • 1 butter lettuce, leaves separated
  • 200.00 gm cooked Basmati rice
  • 3 spring onions, thinly sliced
  • 1 long red chilli, seeds removed, thinly sliced
Instructions:
  • Chill steak for 15 minutes to aid in thinly slicing, then cut into strips. Use a rolling pin to flatten each strip to 2mm thickness.
  • In a bowl, mix together onion, garlic, soy sauce, sesame oil, ginger, and sugar. Add beef and coat it well with the marinade. Refrigerate in the pan for 1 hour.
  • Heat up the barbecue or chargrill to high. Quickly grill the beef, flipping after 10 seconds on each side, until just cooked.
  • Distribute rice into lettuce cups. Arrange beef slices on top and sprinkle with spring onion and chili. Finish by drizzling with beef cooking juices before serving.
