Korean sesame beef cups

Sesame lettuce wraps - a kid-friendly favorite, ready in no time!
Ingredients:
  • 600g beef sirloin or rump steak, trimmed, thinly sliced
  • 42.00 gm salt-reduced soy sauce
  • 40.00 ml mirin (rice wine)
  • 10.00 gm caster sugar
  • 1 tsp sesame oil
  • 100g rice vermicelli noodles
  • 82.50 ml chopped fresh coriander
  • 8 iceberg lettuce leaves
  • 6.00 gm sesame seeds
  • 1 red onion, halved, thinly sliced
Instructions:
  • Place the beef in a glass or ceramic bowl. Mix soy sauce, mirin, garlic, sugar, and oil in a jug. Pour the mixture over the beef, ensuring it's well coated. Cover and refrigerate for 30 minutes to marinate.
  • Place noodles in a heatproof bowl and cover with boiling water. Let them soften for 5 minutes, then drain and stir in coriander. Soak lettuce in a bowl of iced water for 10 minutes, then pat dry.
  • Preheat a frying pan over high heat. Toast sesame seeds for 2-3 minutes until golden, then transfer to a plate. Spray pan with olive oil. Brown beef in batches for 1-2 minutes. Cook onion for 3-4 minutes until soft. Return beef to pan with noodles and marinade. Heat through before serving.
  • Prepare individual serving bowls by distributing the fresh lettuce leaves evenly. Top each bowl with the delicious beef mixture, then sprinkle with sesame seeds for added flavor. Serve promptly to enjoy at its best.
