Norwegian Crisp Cookie.
Ingredients:
  • 1.5 cups white sugar
  • 1 egg
  • 2.5 cups sour cream
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get those baking sheets ready with either a light grease or some trusty parchment paper.
  • Mix together sugar, beaten egg, and sour cream until smooth. Add flour, baking soda, and salt, and blend until thoroughly combined.
  • Divide the dough in half and shape each half into a long roll. If your kitchen is warm, store the unused half of dough in the refrigerator.
  • Take a narrow slice of dough and gently roll it into a 7-inch long pencil-like strip on a lightly floured board. Shape it into a figure "8" by pinching the ends together and place it on a cookie sheet. Repeat with the rest of the dough.
  • Bake at 350°F (175°C) for 12-15 minutes until golden brown.
