Lithuanian favorite: Potatoes and onions layered with crispy salt pork, baked golden.
Ingredients:
  • 0.75 pound salt pork, diced
  • 1 onion, coarsely chopped
  • 5 pounds potatoes, peeled and cubed
  • 3 onions, coarsely chopped
  • 6 eggs
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • ground black pepper to taste
Instructions:
  • Preheat your oven to 450°F (230°C) and generously oil a 12x15-inch pan with olive oil.
  • In a large, deep skillet set over medium heat, crisp up the salt pork until evenly browned, stirring occasionally. Add and sauté 1 chopped onion until tender and lightly browned. Set aside for later use.
  • In a large bowl, mix together potatoes, chopped onions, and 1 egg. Transfer the mixture to a food processor and blend until smooth. Transfer the puree back to the bowl and season with pepper. Stir in the salt pork mixture and gradually add flour to absorb some moisture, avoiding using too much.
  • Bake in the oven at the initial temperature for 25 minutes, then lower the heat and bake for 1 more hour until the top is golden brown.
