Festive Lithuanian potato and bacon dish, perfect with ham or turkey. Time-consuming but delicious!
Ingredients:
  • 1 pound bacon, diced
  • 2 large onions, diced
  • 0.5 cup butter
  • 5 pounds russet potatoes, peeled and shredded
  • 1 (12 fluid ounce) can evaporated milk
  • 6 eggs
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a Dutch oven over medium heat, cook the bacon until softened and releasing grease. Add onion and cook until translucent. Uncover and caramelize until golden brown. Remove from heat and stir in butter to melt.
  • Mix the shredded potatoes into the onion mixture, then incorporate the evaporated milk and eggs until thoroughly blended. Transfer the mixture into a 9x13-inch glass baking dish.
  • Bake in a hot oven for 1 hour, or until golden. Let it rest for 10 minutes, then slice into 3x3-inch squares and serve hot.
