Lithuanian kugela: Oven-baked delight with grated potatoes, bacon, onion, eggs, and creamy evaporated milk. Top with sour cream.
Ingredients:
  • 1 pound bacon, diced
  • 1 large onion, grated
  • 5 pounds Russet potatoes, finely grated, and soaked in water
  • 0.5 cup flour
  • 1 (12 ounce) can evaporated milk
  • 6 eggs
  • salt and pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking dish.
  • Fry bacon pieces in a large skillet over medium heat until crispy. Transfer them to paper towels, saving half of the bacon drippings. Set aside. In the same skillet, sauté onions until soft and translucent.
  • Combine reserved drippings, crispy bacon, onions, and potatoes in a large bowl. Add flour, creamy evaporated milk, and eggs. Season generously with salt and pepper to enhance the flavors.
  • Transfer the mixture into a baking dish, and bake in a preheated oven until the top is golden brown, approximately 1 hour. Cut into squares and optionally serve with sour cream.
