Family-friendly lamb casserole - simple and delicious!
Ingredients:
  • 1 kg diced lamb
  • 2 sticks celery, chopped
  • 2 medium carrots, halved lengthways, sliced
  • 1 medium onion, sliced
  • 375ml beef stock
  • 60ml red wine
  • 60ml tomato paste
  • 180g pasta
  • 250ml pasta bake sauce
  • 187.50 ml grated tasty cheese
Instructions:
  • Preheat your oven to 180°C.
  • In a large ovenproof casserole dish, heat a drizzle of oil over medium-high heat. Brown the lamb in batches until it's beautifully seared on all sides. Remove the lamb from the dish.
  • Sauté celery, carrot, and onion in the same pan for 3 minutes until the onion is soft. Add lamb, stock, wine, and tomato paste. Stir well to combine. Bring to a boil, cover with a lid, transfer to the oven, and cook for 1 hour.
  • Cook the pasta in a large pot of boiling salted water according to package directions. Drain the pasta and toss it with the sauce in a medium bowl.
  • Uncover the casserole dish, evenly spread the pasta mixture on top of the meat, sprinkle with cheese, and bake for an additional 20 minutes until golden brown.
