Lamb with cheesy oat dumplings

Savor rich lamb casserole topped with delectable cheesy dumplings.
Ingredients:
  • 8 lamb chump chops
  • 40.00 ml plain flour
  • 375ml beef stock
  • 500g new potatoes, halved
  • 2 carrots, chopped
  • 2 sticks celery, chopped
  • 6 small onions, peeled
  • 2 parsnips, chopped
  • 400g can diced tomatoes
  • 300.00 gm self-raising flour
  • Salt & freshly ground pepper
  • 60g butter, cubed
  • 60g rolled oats
  • 60g cheese
  • 180ml milk
Instructions:
  • Preheat your oven to 160°C. Gently coat the lamb with flour. Heat oil in a large flame and ovenproof pan over medium-high heat. Sear the lamb in batches until beautifully browned. Discard any excess oil after cooking.
  • Pour in the stock over high heat, making sure to use a wooden spoon to scrape up the flavorful bits stuck to the bottom of the pan. Mix in the vegetables and tomatoes, then add the lamb back to the pan. Give everything a good stir, cover, and bake for 1 hour until the lamb is tender.
  • In a large bowl, mix flour, salt, and pepper. Rub in butter until the mixture resembles breadcrumbs. Add oats and cheese, pour in milk, and combine everything into a dough. Knead the dough until smooth, then roll it out and cut out 12 rounds using a 5cm cutter.
  • Preheat oven to 220°C. Place dumplings on top of the casserole. Bake uncovered for 15 minutes until golden and puffed.
