Lamb Chops with Herbed-Feta Orzo

Delicious broiled lamb chops served with cheesy tomato pasta ready in just 15 minutes!
Ingredients:
  • 1 cup uncooked orzo or rosamarina pasta (6 oz)
  • 4 cloves garlic, finely chopped
  • 1 tablespoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 lamb loin chops (about 2 lb), trimmed of fat
  • 1/3 cup crumbled tomato-basil feta cheese
  • 2 tablespoons finely chopped drained sun-dried tomatoes in oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons olive oil
Instructions:
  • Preheat oven to broil and grease broiler pan with cooking spray.
  • Prepare pasta according to package instructions, without adding salt or oil. Drain the pasta and transfer it to a medium bowl, covering it to maintain warmth.
  • In a small bowl, combine garlic, oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Rub mixture on both sides of lamb chops. Place chops on broiler pan and broil for 8 minutes, turning once, until cooked to your liking.
  • Gently toss in cheese, tomatoes, lemon juice, oil, and the remaining 1/4 teaspoon of salt and pepper with the pasta. Serve alongside the lamb chops.
