Delicious, quick-cooking lamb chops paired with creamy bean puree and fresh herb salad. Perfect meal!
Ingredients:
  • 420g can cannellini beans
  • 2 garlic cloves, crushed
  • 0.63 gm ground cumin
  • 80ml lemon juice
  • 4 lamb forequarter chops
  • Sea salt & freshly ground black pepper
  • 500.00 ml coriander sprigs
  • 250.00 ml small mint leaves
  • 40.00 ml finely chopped red onion
  • 82.50 ml roasted yellow pepper strips, finely chopped
  • 36.40 gm extra virgin olive oil
Instructions:
  • Combine the beans, garlic, cumin, and half of the lemon juice in a blender or food processor until a smooth mixture forms. Season with salt and pepper to your liking.
  • Lightly coat the chops with oil and season them. Grill the chops on a heated grill plate for 2 minutes on each side, or until they reach your desired level of doneness. Take them off the heat, cover them with foil, and let them rest for 5 minutes before serving.
  • In a medium bowl, mix together coriander, mint, onion, peppers, oil, and the rest of the lemon juice. Serve the chops with a dollop of white bean puree and a sprinkle of fresh herb salad on top.
