Whip up a delicious lamb kofta salad in just 30 minutes!
Ingredients:
  • 500g Graze Lamb Mince
  • 40g olive
  • 2 spring onions, chopped
  • 250g Golden Supergreen Salad Kit
  • 350g mixed tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 82.50 ml pomegranate seeds
  • 36.40 gm olive oil, extra
Instructions:
  • Mix the ground meat, olives, spring onion, and garlic in a medium bowl and season well. Shape the mixture into 16 ovals, then coat them by drizzling with oil and tossing gently.
  • Preheat a barbecue grill or chargrill to a medium heat. Grill the koftas, turning occasionally, for 10 minutes or until fully cooked.
  • Mix the salad leaves, tomato, onion, and pomegranate seeds in a large bowl, then transfer to a serving dish. Add the kofta on top and sprinkle with almonds. Season to taste. In a small jug, mix the dressing from the salad kit with extra oil, then drizzle over the salad before serving.
