Create a DIY BBQ spread for a casual meal by setting out all ingredients for guests to customize their own dishes.
Ingredients:
  • 1 small red onion, thinly sliced
  • 4 thick (or 8 thin) lamb sausages or beef sausages
  • 4 pita bread rounds
  • 250g hummus
  • 500.00 ml mixed salad leaves
  • 250.00 ml fresh mint leaves
  • 250.00 ml fresh parsley
  • 40.00 ml unsalted pistachios, slivered or chopped
  • 140g yoghurt
  • 2 tsp sumac (see note)
Instructions:
  • Place the onion in a bowl, sprinkle with salt, and let stand for 10 minutes to soften.
  • Preheat a chargrill pan or barbecue over medium-high heat. Cook the sausages until browned and cooked through, turning occasionally for 6-8 minutes. Slice the sausages into 2-3 pieces on a diagonal before serving.
  • Warm the pita on the grill until slightly toasted. Rinse and drain the onion. Spread the warm pita with a generous layer of hummus. Top with sausages, onion, salad leaves, fresh herbs, and pistachios. Finish with a drizzle of yogurt and a sprinkle of sumac. Enjoy!
