Savory Asian-inspired lamb soup.
Ingredients:
  • 3 lamb shanks
  • 2 brown onions, coarsely chopped
  • 2 tsp coriander seeds, crushed
  • 4 whole star anise
  • 1 cinnamon stick
  • 2 tsp black peppercorns
  • 1l beef stock
  • 500ml water
  • 3 fresh lasagne sheets, cut into 4cm-wide strips
  • 42.00 gm lime juice
  • 4 green onions, trimmed, thinly sliced diagonally
  • Coriander leaves, to serve
  • Vietnamese mint leaves, to serve
  • Lime wedges, to serve
Instructions:
  • In a large saucepan over high heat, combine lamb shanks, onion, coriander seeds, star anise, cinnamon, peppercorns, beef stock, and water. Bring to a boil. Reduce heat and simmer for 2 hours until lamb is tender. Remove from heat, set aside lamb shanks. Let the mixture cool, then chill in the fridge. Remove meat from shanks, discard bones.
  • Remove any excess fat from the stock and discard. Strain the mixture through a fine sieve into a large saucepan. Bring it to a boil over high heat, then add back the meat along with pasta, soy sauce, and lime juice. Simmer until ready.
  • Divide the soup into bowls. Garnish with green onion, coriander, and mint leaves. Serve with lime wedges on the side for extra flavor, if desired.
