Braised lamb shanks in aromatic curry for a cozy fall dinner.
Ingredients:
  • 4 Lamb Shanks, French trimmed
  • 2 brown onions, cut into wedges
  • 125g curry paste
  • 500g Greek-style yoghurt
  • 300g green beans, ends trimmed
Instructions:
  • Preheat a large non-stick casserole pan over medium-high heat. Brown the lamb in two batches for 5 minutes until golden all over. Set aside in a bowl. Lower the heat, sauté the onion for 5 mins until softened. Stir in curry paste and cook for 1 min until fragrant.
  • Add the lamb back to the pan along with the yoghurt and 2 cups (500ml) of water. Cook covered, turning occasionally, for 2 hours or until the lamb is tender and easily comes off the bone.
  • Stir in the beans and simmer in the flavorful curry for 5 minutes until they turn vibrant green and are perfectly tender-crisp. Season to taste.
