Elevate everyday meals with vibrant lamb steaks and fresh salad.
Ingredients:
  • 600g lamb steak
  • 1 orange
  • 56.88 gm olive oil
  • 11.80 gm wholegrain mustard
  • 50g mixed salad leaves
  • 450g can baby beetroot, drained, cut into wedges
  • 28.75 gm walnut pieces
  • 1 medium avocado, sliced
  • 50g feta, crumbled
Instructions:
  • Preheat a greased barbecue plate or chargrill over medium heat. Grill steaks for 4 minutes on each side for medium doneness or desired doneness. Place on a plate, cover with foil, and let rest for 5 minutes before serving.
  • Peel and separate the segments of the orange, saving 2 tablespoons of juice. Put the reserved orange juice, oil, and mustard in a sealed jar. Add salt and pepper for seasoning. Close the lid tightly and shake everything together to mix.
  • In a bowl, mix together orange segments, salad leaves, beetroot, walnuts, and avocado. Pour half of the dressing over the ingredients. Toss everything gently to combine.
  • Plate the steaks alongside the salad mixture, sprinkle with crumbled feta, and drizzle with the remaining dressing. Enjoy your meal!
