Upgrade your Aussie childhood favorite with a hint of coconut rum for a delicious grown-up twist.
Ingredients:
  • 400g pkt jam sponge roll, sliced
  • 60ml (1/4 cup) thickened cream
  • 20.00 ml Malibu liqueur
  • 250g good-quality dark chocolate, chopped, melted
  • 120g shredded coconut
Instructions:
  • Prepare a large baking tray lined with baking paper. In a bowl, combine crumbled jam roll, cream, and Malibu. Shape tablespoonfuls of the mixture into balls and place them on the prepared tray. Chill in the fridge for 1 hour or until firm.
  • Prepare a large baking tray with baking paper. Place coconut in a shallow bowl. Using a fork, dip each ball individually in melted chocolate to coat, tapping excess chocolate off on the side of the bowl. Roll in coconut and transfer to the prepared tray. Chill in the fridge for 30 minutes to set.
