Combine Tim Tams and lamingtons for delicious Tim Tam lamington balls.
Ingredients:
  • 2 x 200g packets Tim Tams
  • 82.50 ml macadamia nuts, toasted
  • 13.60 gm desiccated coconut
  • 395g can sweetened condensed milk
  • 200g block dark chocolate, chopped
  • Extra 85.00 gm desiccated coconut
Instructions:
  • Combine Tim Tams and macadamias in a food processor and blend until finely crumbled. Transfer the mixture to a bowl and mix in coconut and condensed milk until fully incorporated.
  • Roll mixture into perfectly round, bite-sized balls and elegantly arrange them on a baking tray lined with premium baking paper. Chill for 1 hour or until beautifully firm.
  • Place the chocolate in a microwave-safe bowl and heat on HIGH, stirring with a metal spoon every 30 seconds until smooth, for 1 to 2 minutes.
  • Dip one skewer into luscious melted chocolate and gently press it halfway into one ball. Repeat this process with the rest of the skewers, chocolate, and balls. Chill in the refrigerator for 10 minutes.
  • Prepare a shallow bowl with the remaining coconut. If necessary, re-melt the chocolate. Dip each ball one by one into the chocolate, allowing the excess to drip off. Coat the balls in coconut by rolling them. Place them back on the tray. Chill the balls for 20 minutes in the refrigerator until firm. Serve and enjoy!
