Decadent Tim Tam pie with chocolate crust, dual ganache filling, and cream topping. Perfect for dinner parties; guaranteed to impress guests!
Ingredients:
  • 2 x 200g pkts dark chocolate Tim Tams
  • 35g butter, melted, cooled
  • 300ml double cream, whipped to soft peaks
  • Dark cocoa powder, to serve
  • 400g milk chocolate, chopped
  • 250ml (1 cup) thickened cream
  • 100.00g butter
  • 4.40 gm vanilla extract
  • 1.20 gm sea salt flakes
  • 150g dark chocolate (70% cocoa), chopped
Instructions:
  • Prepare the tart tin by greasing the 2.5cm-deep, 11 x 35cm fluted tart tin with removable base. Crush 300g Tim Tams in a food processor until fine. Add butter and combine in the processor. Press the mixture onto the base and sides of the tin. Chill in the freezer for 15 minutes to set.
  • For the milk chocolate ganache, gather milk chocolate, cream, butter, vanilla, and sea salt in a microwave-safe bowl. Heat in the microwave, stirring every 30 seconds, until melted and smooth (1-2 minutes). Cool for 5 minutes, then pour over the tart base. Chill in the fridge for 2 hours until set.
  • To prepare the rich dark chocolate ganache, combine the dark chocolate and butter in a microwave-safe bowl. Heat in the microwave on High for 1 minute. Stir until glossy and velvety. Let it cool a bit. Drizzle it over the milk chocolate ganache and spread evenly. Refrigerate the tart for 15-20 minutes until firm.
  • Cut the remaining Tim Tams diagonally to make shards. Carefully place the tart on a serving plate. Garnish with whipped cream, Tim Tam shards, and a dusting of cocoa.
