Thai chicken salad with ground chicken, fresh herbs, and zesty dressing for a flavorful meal.
Ingredients:
  • 2 lemons, juiced
  • 1 lime, juiced
  • 2 tablespoons fish sauce, or more to taste
  • 1 tablespoon rice vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon cayenne pepper
  • 1 teaspoon lemon zest
  • 1 pound ground turkey
  • 1 clove garlic, minced
  • 1 cup water to cover
  • 0.5 red onion, thinly sliced
  • 1 carrot, shredded
  • 0.5 cup coarsely chopped chestnuts
  • 3 Thai chile peppers, sliced
  • 3 green onions, sliced
  • 0.25 cup chopped fresh mint
  • 0.33333334326744 cup chopped fresh Thai basil
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons toasted rice powder
  • 2 tablespoons Thai chile flakes
Instructions:
  • Combine the lemon juice, lime juice, fish sauce, rice vinegar, sugar, cayenne, and lemon zest in a bowl and whisk until the dressing is smooth.
  • Start by placing ground turkey or chicken in a large skillet and adding garlic. Fill the skillet with enough water to cover the meat and bring it to a boil. Cook and stir while breaking the meat apart with a fork until it is browned and crumbly, for approximately 7 to 10 minutes. Drain any excess liquid and transfer the cooked meat to a large glass bowl.
  • Combine red onion, carrot, chestnuts, Thai chile peppers, green onions, mint, basil, and cilantro in a bowl, mixing well. Chill in the refrigerator for about 30 minutes before serving.
  • Combine rice powder and Thai chile flakes with salad mixture, ensuring everything is thoroughly mixed.
