Impress with quick and easy chicken tacos ready in just 17 minutes for a delicious meal for the whole family.
Ingredients:
  • 12 mini tortillas
  • 400g can red kidney beans, rinsed, drained
  • 360g barbecued or poached chicken meat, shredded
  • 2 large tomatoes, chopped
  • 1 baby cos lettuce, coarsely chopped
  • 1 carrot, peeled, coarsely grated
  • 1 sweetcorn cob, kernels removed
  • 3 green shallots, trimmed, finely chopped
  • 125.00 ml fresh coriander or mint leaves, plus extra, to serve
  • 1 avocado
  • 10.00 gm Mexican spice mix
  • 1 lime, juiced, plus extra lime wedges, to serve
  • Chipotle mayonnaise, to serve
Instructions:
  • Heat a chargrill pan or grill over medium heat. Lightly spray tortillas with oil and grill for 1-2 minutes on each side until lightly charred. Transfer to a plate and cover to keep warm.
  • In a large bowl, gently mash the beans with a fork. Next, add the chicken, tomato, lettuce, carrot, corn, shallot, and herbs. Mix everything together well and season to taste. Spoon the chicken mixture onto the tortillas and arrange beautifully on a serving platter.
  • Smash ripe avocado in a bowl and mix in the Mexican spice blend and lime juice to your liking. Spoon the flavorful mixture onto the center of the tacos. Finish by adding a swirl of creamy mayonnaise, a sprinkle of fresh herbs, and serve with lime wedges on the side.
