Indulge in a velvety dairy-free homemade condensed coconut milk that is easy to cook. Keep a close watch to avoid burning. Perfect for sweet or savory dishes, and can last up to 2 weeks. Enjoy tropical flavors in desserts or add a twist to a chicken curry.
Ingredients:
  • 2 x 270ml cans coconut milk
  • 140g (2/3 cup) caster sugar
Instructions:
  • In a saucepan, combine the creamy coconut milk and the sweetness of sugar. Gently stir over low heat until the sugar completely dissolves, making sure not to let it simmer.
  • Simmer the milk mixture over medium-low heat, stirring occasionally, until slightly thickened and reduced to 1 1/2 cups, about 35-45 minutes.
  • Transfer the milk mixture to a heatproof bowl and allow it to cool at room temperature for around 30 minutes, stirring occasionally to release the heat and thicken. Cover the bowl and chill in the fridge until needed.
