Strawberry condensed milk Weet-Bix bars recipe

Whisk condensed milk with strawberries, spread on Weet-Bix base for a delightful treat. Simple pantry ingredients for a quick and tasty snack.
Ingredients:
  • 175g butter, melted
  • 165g (3/4 cup) caster sugar
  • 3 Weet-Bix, crushed
  • 150g (1 cup) self-raising flour
  • 85g (1 cup) desiccated coconut
  • 375g strawberries, hulled
  • 2 x 395g cans sweetened condensed milk
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease a 23cm square cake pan and line it with baking paper, making sure the paper overhangs on two opposite sides for easy removal later.
  • In a large bowl, mix together butter, sugar, Weet-Bix, flour, and coconut until well combined. Spread the mixture evenly over the prepared pan and bake for 15 minutes, or until lightly golden. Allow to cool before serving.
  • Next, transfer the strawberries into a food processor and blend until smooth.
  • Combine condensed milk and strawberry puree in a bowl until velvety. Pour over the Weet-Bix base. Bake until edges lightly bubble and the top sets. Cool to room temperature, then refrigerate overnight.
  • Serve by elegantly cutting into bite-sized pieces.
