Strawberry and condensed milk slice recipe

Heavenly slice with condensed milk, coconut, and strawberries.
Ingredients:
  • 190g (1 1/4 cups) plain flour
  • 100g cold butter, chopped
  • 80g (1/2 cup) pure icing sugar, sifted
  • 30.00 gm iced water
  • 255g (3 cups) desiccated coconut, plus 2 tbsp, extra
  • 40g (1 ⁄4 cup) self-raising flour
  • 395g can sweetened condensed milk
  • 10.40 gm shredded coconut
  • 250g fresh strawberries, hulled, thinly sliced
  • 12.00 gm pure icing sugar, sifted
  • 2.50 gm butter, at room temperature
  • 10.40 gm milk
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Grease and line a 20 x 30cm slice pan with baking paper, ensuring the paper overhangs the long sides for easy removal later.
  • Combine plain flour, butter, and 1⁄2 cup icing sugar in a food processor until mixture resembles fine crumbs. Slowly add the iced water until the dough comes together in a ball (you may not need all the water). Press dough evenly into the prepared pan and prick the base with a fork. Bake for 15-20 minutes until lightly golden. Allow to cool before using.
  • In a large bowl, mix desiccated coconut and self-raising flour. Add condensed milk and egg, stirring until combined. Spread the mixture evenly over the base. Combine shredded coconut and extra desiccated coconut in a bowl, then sprinkle over the mixture. Arrange strawberries on top. Bake for 30 minutes until firm and golden. Let it cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
  • Prepare a luscious icing by blending together icing sugar, butter, and just the right amount of milk in a small bowl until a thick paste forms. Then, gently heat the bowl over simmering water, ensuring it doesn't touch the water, stirring until the mixture becomes smooth and thin.
  • Transfer the icing into a sealable plastic bag, cut off a corner, and drizzle it over the slice. Allow it to set before slicing and serving.
