Layered Beef and Potato Casserole

Easy and quick 6-ingredient main dish, ready in just 15 minutes.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2 cups frozen mixed vegetables (from 1-lb bag)
  • 1 jar (12 oz) beef gravy
  • 1 bag (28 oz) frozen potatoes O’Brien with peppers and onions, thawed
  • 2 cups shredded Swiss cheese (8 oz)
Instructions:
  • Preheat oven to 350°F. Grease a 12x8-inch (2-quart) glass baking dish. Cook ground beef in a 10-inch skillet over medium-high heat for 5 to 7 minutes, stirring occasionally until fully cooked; drain any excess fat. Add mixed vegetables, gravy, and salt. Cook for an additional 3 to 4 minutes until vegetables are thawed and mixture is heated through.
  • Start by arranging 3 cups of potatoes and 1 cup of cheese in a baking dish. Spoon the ground beef mixture over the cheese and top it with the remaining potatoes. Cover the dish with foil before baking.
  • Bake for 55 to 60 minutes until bubbly, then remove foil and sprinkle with 1 cup of cheese. Bake uncovered for an additional 5 minutes until cheese is melted. Before serving, sprinkle with paprika.
